WHY THIS PAIRING

This is the top of our range, and the setup with no ceiling in it. The Primus runs a gear pump instead of a vibratory one, with a 0.8L boiler and a dedicated SuperSteam thermoblock — so you can extract and steam at the same time, shot after shot, without waiting for anything to recover. The ZD-19SG grinds by weight rather than by time: set your dose and get your dose, whether the hopper is full or nearly empty, at the start of service or four hours in. Its 75mm flat burrs move 4g a second with 10 programmable settings, so several people can work the same grinder without anyone redialling.

If you're opening a café, running a pop-up, or your home bar has stopped being a hobby, this is the pairing.

Between them they need 41cm of bench width. Check your height clearance too — the ZD-19SG stands 60.5cm tall, which is more than most overhead cabinets allow.
